  • Passion for the pastry and culinary arts in general
  • High School Diploma
  • Good English knowledge
  • Getting more than 18 years old
  • Complete a personal interview in English with the Director

Pastry Programs

All the classes are conducted in English.

1 course per day = Pastry

2 courses per day = Pastry + Cooking


5 days French Pastry

1 course per day: $850

2 courses per day: $1,160.00

This short program has been specifically prepared for “beginners” or non-professionals who want to discover the high standards of French cuisine.

Our main objectives are that our students learn many new recipes, improve their skills with the pleasure of cooking with professional teams and enjoy their experience with us.


5 days / 3 hours per day / 5 days per week (Monday to Friday) / weekends are free

12:00 p.m. to 3:00 p.m / 3:30 pm to 6:30 pm

Special programs based on different themes are organized for each week and are available upon request.

The teachers will provide the students with many tricks and tips to create easy and delicious dishes, with a beautiful and impressive presentation.


20 days French Pastry

1 course per day: $2,900.00 (Tuitions fees : $2,650 / Enrollment Fees: $250)

2 courses per day: $5,500.00 (Tuitions fees : $5,250 / Enrollment Fees: $250)

This short program has been specifically prepared for beginner, intermediate or advanced students who want to learn or improve their knowledge in French Pastry at a higher level. It is tailored for beginners as well as for professionals. Depending on the student previous level of experience the intakes’ dates are different.

We emphasize on giving our students a special and unique experience on a professional level and making the most of our highly experienced pastry teachers’ advice, tips and tricks. We do guaranty exclusively hands-on classes based on Michelin Star’s standards of excellence and a teamwork in pairs to help each other.

  • 2nd Week: Chocolates & Candies
  • 3rd Week: Entremets & Cakes
  • 4th Week: Plated Desserts

40 days French Pastry, level I + II

1 course per day: $2,900.00 (Tuitions fees :$2,650.00 / Enrollment Fees: $250)

2 courses per day: $5,500.00 (Tuitions fees :$5,250.00 / Enrollment Fees: $250)

We elaborated this program for professionals and beginners’ cooks who want to improve and fine-tune their skills in French Pastry at a one Michelin star level.

The student’s outcomes will include a new recipes portfolio, more creativity, a lot of tips and tricks taught by our highly skilled teachers, the ability to work in team and a memorable experience in Miami.

40 days / 5 days per week (Monday-Friday) / weekends are free

12pm to 3 pm /3:30pm to 6:30pm

The first month the student will begin with the Gourmet Program (see here above), following with :

  • 5th Week: Breads & Viennoiseries, Level II
  • 6th Week: Chocolates & Candies, Level II
  • 7th Week: Entremets & Cakes, Level II
  • 8th Week: Plated Desserts, Level II

60 days French Pastry, level I + II + III

1 course per day: $7,400.00 (Tuitions fees :$7,150.00 / Enrollment Fees: $250)

2 courses per day: $13,600.00 (Tuitions fees :$13,350.00 / Enrollment Fees: $250)

This program has been designed to give students the latest high level techniques in pastry and the opportunity to add more creativity in their sweet cooking.

The Program is made of the Epicure program + 20 days at level III teaching.

60 days / 5 days per week (Monday-Friday) / weekends are free

12pm to 3pm/3:30pm to 6:30pm


1 year French Cooking or Pastry

2 courses per day: $19,650.00 (Tuitions fees : $19,400 / Enrollment Fees: $250) + extra cost in France

This course gives you the opportunity to learn gastronomic technicals from chefs in two very different parts of the world, allowing you to double your knowledge, but also explore double cultures as you start your culinary journey.

It has been prepared for beginners, professionals, and people who are seeking to change career, and want to learn or improve their knowledge in French cooking or pastry (level one Michelin star ).

The first part of the program in Miami

3 Months in Coral Gables, either Cooking or Pastry.

Depending on their competency in French, intensive French lessons will be highly recommended during the 3 months course in Miami to be able to attend the internship.

The second part of the program in Agde (South of France)

3 Months program, 3 different options :

  • French lessons + Cooking hands-on classes
  • French lessons + Pastry hands-on classes
  • Cooking hands on + Pastry hands-on classes, if the French level is sufficient to handle the internship

The course run over 12 weeks with 3 hours cooking or pastry and 3 hours French each day, five days per week. All weekends are free.


The school will organize a placement at a gastronomic Hotel-restaurant or restaurant in France.

The Hotel-restaurant or restaurant will be assigned after several consultations, taking into account the student’s technical level and behavior.

During the internship, students will receive an allowance of 555 euros per month + full board and lodging.

Gastronomicom collaborates exclusively with top-end Hotel-restaurants and restaurants in France such as the Relais- Chateaux, Leading Hotels of the World and other Luxurious Restaurants.
