Our Culinary Academy offers 4 French Pastry Programs : 1 week DISCOVERY, 1 month GOURMET, 2 months EPICURE and 3 months GASTRONOMIC.

1 Week French Pastry
Cost: $1,130 / Enrollment Fees: $0
This short program has been specifically prepared for “beginners” or non-professionals who want to discover the high standards of French cuisine.
The teachers will provide the students with many tricks and tips to create easy and delicious dishes, with a beautiful and impressive presentation.
1 Month French Pastry, level I or II or III
Cost: $3,990 / Enrollment Fees: $250
This short program has been specifically prepared for beginner, intermediate or advanced students who want to learn or improve their knowledge in French Pastry at a higher level. It is tailored for beginners as well as for professionals. Depending on the student previous level of experience the intakes’ dates are different.

We emphasize on giving our students a special and unique experience on a professional level and making the most of our highly experienced pastry teachers’ advice, tips and tricks. We do guaranty exclusively hands-on classes based on Michelin Star’s standards of excellence and a teamwork in pairs to help each other.
4 weeks, 5 days a week, 4 hours a day, 1pm – 5pm (weekends are free):
- 1st Week: Breads, Viennoiseries, Doughs
- 2nd Week: Cakes and Entremets
- 3rd Week: Chocolates
- 4th Week: Plated Desserts and Decoration
2 months French Pastry, level I + II
Cost: $7,400 / Enrollment Fees: $250
We elaborated this program for professionals and beginners’ cooks who want to improve and fine-tune their skills in French Pastry at a one Michelin star level.
The student’s outcomes will include a new recipes portfolio, more creativity, a lot of tips and tricks taught by our highly skilled teachers, the ability to work in team and a memorable experience in Miami.
8 weeks, 5 days a week of hands-on classes from 1pm to 5pm. All weekends are free.
The first month the student will begin with the Gourmet Program (see here above), following with :
- 5th Week: Breads, Viennoiseries, Doughs, Level II
- 6th Week: Cakes and Entremets, Level II
- 7th Week: Chocolates, Level II
- 8th Week: Plated Desserts and Decoration, Level II
3 months French Pastry, level I + II + III
Cost: $9,850 / Enrolment Fees: $250
This program has been designed to give students the latest high level techniques in pastry and the opportunity to add more creativity in their sweet cooking.
The Program is made of the Epicure program + 4 weeks at level III teaching.
1 YEAR INTERNSHIP PROGRAM
1 year French Cooking or Pastry
Cost: $19,400 / Enrolment Fees: $250
This course gives you the oportunity to learn gastronomic technique from chefs in two very different parts of the world, allowing you to double your knowledge, but also explore double cultures as you start your culinary journey.It has been prepared for beginners, professionalsand people who are seeking to change career, and want to learn or improve their knowledge in French cooking or pastry (level one Michelin star ).
First part of the program in Miami
3 Months in Coral Gables, either Cooking or Pastry.
Depending of their competency in French, intensive French lessons will be highly recommended during the 3 months course in Miami to be able to attend the internship.
Second part of the program in Agde (South of France)
3 Months program, 3 different options :
- French lessons + Cooking hands on classes
- French lessons + Pastry hands on classes
- Cooking hands on + pastry hands on classes, if the French level is suficient to handle the internship
The course run over 12 weeks with 3 hours cooking or pastry and 3 hours French each day, five days per week. All week ends are free.
The school will organize a placement at a gastronomic Hotel-restaurant or restaurant in France.
The Hotel-restaurant or restaurant will be assigned after several consultations, taking into account the student’s technical level and behaviour.
During the internship students will receive an allowance of 534 euros per month + full board and lodging.
Gastronomicom collaborates exclusively with top-end Hotel-restaurants and restaurants in France such as the Relais- Chateaux, Leading Hotels of the World and other Luxurious Restaurants.
